From 9th to 18th November 2018, Melt Café in Mandarin Oriental, Singapore is pleased to help guests discover the best of authentic Indonesian cuisine with the appointment of Jakarta-born Chef Kiki Djohardin as Chef de Cuisine. There are many different flavours guests can indulge in, no matter what they are craving.
Start dinner with an assortment of prawns, lobster and bitter bean crackers or a traditional appetising Gado-Gado dressed in sweet and crunchy peanut sauce.
An essential piece to any genuine Indonesian meal is using one of the five fiery homemade sambals to complement the meal. Chef Kiki recommends the tomato-based Sambal Bajak traditionally made using a mortar and pestle and versatile enough to be used as a marinade for poultry or topping for fish, such as the Pepes Ikan.
Guests who are meat lovers can delight in a creamy Indonesia Chicken Curry originating from West Sumatra and the well-known Babi Guling. Babi Guling is roasted suckling pig stuffed with rice and basted inside and out with a heady concoction of turmeric, coriander seeds, lemongrass, black pepper and garlic, which enhances the flavour during the slow spit-roasting process.
Chef Kiki’s personal favourite would be his Oxtail Soup, made using a secret recipe and has earned its reputation for being one of the best hangover cures during his time at Mandarin Oriental, Las Vegas. Simmered for four hours, its robust and punchy depth is accentuated by the juices from the bone-in meat and a handful of spices, including nutmeg, star anise, cloves and cardamom.
Indonesia is known for its sweet tooth as well, so finish off the meal with treats such as the much loved Pisang Goreng, an assortment of Nonya Kuehs and Chendol Gula Melaka cake.
Experience the classic flavours from Chef Kiki at Melt Café. The dinner buffet is priced at SGD 78 per person from Sunday to Thursday and SGD 88 per person from Friday and Saturday, inclusive of free flow juices.
