Perched on top of a cliff where the valley meets the Ayung River, Mandapa, a Ritz-Carlton Reserve offers more than just a beautiful scenery. At Kubu, discerning diners can indulge in signature dishes ranging from Foie gras parfait with strawberry balsamic and hazelnut; Alaskan scallops with Jerusalem artichoke, black radish and kaffir lime jus; as well as Wagyu beef rib eye and braised tongue with celeriac and truffle jus. Meaning “hut” or “shelter” in the Indonesian language, Kubu, calls its design from the huts in which Balinese farmers store rice after seasonal harvesting.
