Bringing the Italian Taste with Indonesian Flair: An Exquisite Wine Dinner by Rosso


Combining Italian and Indonesian taste might create wrinkles on your forehead. And yet, the collaboration between Chef Norman Ismail and Chef Gianfranco Pirrone managed to bring an authentic dining experience to Rosso, the favourite Italian restaurant at Shangri-La Hotel, Jakarta. All menus were carefully prepared using the finest ingredients and high-quality wine from Sababay Winery.

On 23 November 2019, guests indulged in the five-course meal for their Friday night dinner at Rosso. When the sun was already set, starting from 6 p.m., they started the feast of Rosso’s newly introduced style of ‘East Meets West’. Their chef combo skillfully prepared an unforgettable dining experience with locally sourced Indonesian and Italian ingredients for the guests. Through his lifelong craftsmanship career as a chef and restaurateur, Chef Norman successfully brought hearty Indonesian taste to Rosso’s exquisite Italian dishes.

Experience the combination of Indonesian and Italian cuisine, as a perfectly served five-course menu is presented by well-known Indonesian chef, Norman Ismail, in collaboration with Rosso Italian chef, Gianfranco Pirrone, as the duo teams up to provide a uniquely authentic dining experience

For the honorable guests, Rosso served Lawar Bali (Balinese Green Bean Salad with Chicken, Zucchini Ribbon, Roasted Tomato, Parmesan Tuile, and Crispy Coconut), paired with Sababay Ascaro dry bubble white 2018 and Muscat Saint Vallier as the appetiser. Then, Rosso pleased the guests’ palate with Keung Udeng—which is an Aceh style Spicy and Sour Seafood Soups with fresh succulent Shrimp meat and creamy Basil pesto —and Soft Shell Crab Gulai Tagliolini- homemade Squid Ink Tagliolini, Gulai Foam and deep-fried Soft Shell Crab – this time with Sababay Reserve White, 2017, Chardonnay. The ultimate combination of Chef Norman and Chef Gianfranco skills continued through the main dish, of which they prepared Seared Tenderloin with Maranggi Reduction (Seared Beef Tenderloin, Maranggi Reduction, and Porcini Mushroom Risotto), paired with Sababay Reserved Red 2017 and Sababay Ludisia Sweet Red. Finally, after the delightful plates, the chefs concluded the festivity with Cassava Cassata (an Italian cassata made from Indonesian cassava), with Sababay Lambrusco sweet bubbly red, 2018.
