With progressive cold and hot plate dishes ordered à la carte and an indulgent dessert buffet, SKAI’s brunch is becoming one of the most talked about dining destinations.

Driven by his passion for high-quality and natural produce, Executive Chef Paul delivers a menu that will win over palates of even the most discerning diners. The social dining experience opens with a diverse selection of charcuterie and fresh bread served at the table, followed by an assortment of à la carte cold and hot main dishes freshly prepared from the kitchen. Highlights of the cold plates include the fresh Sake Cured Gravlax with pickled cucumber and rye bread, as well as the Wagyu Beef Tataki with pickled eryngii and ponzu. For hot plates, diners can opt for the BBQ Oyster with Kimchi butter, the mouth-watering Spiced Seafood Hash with waffle and salsa or the Caramelised Pork Belly with miso and eggplant.

Another highlight of this experiential culinary feast is its selection of fine wines, Champagne and distinctive artisanal cocktails curated by Rusty Cerven, SKAI’s beverage manager. Coffee connoisseurs can enjoy a caffeine burst at the Coffee Cocktails Stations with three new unique concoctions each week. The dedicated cocktail offering also includes exceptional twists on classics such as the Breakfast Bellini with T&T Wheat Vodka, Toasted Oats, Honey, Apricot and Champagne; the Bloody SKAI with bacon-washed Reyka Vodka, dill fino Sherry, spicy mix and tomato juice; and the widely loved Singapore Sling, which SKAI has turned into a refreshing iced slushie, with Citadelle Original Gin, cherry liqueur, Benedictine, lime, fresh pineapple and pomegranate.

Pairing unparalleled views of the cityscape with a curated selection of prime beef cuts and fresh seafood infused with delicate Japanese accents, Chef Paul Hallett’s signature culinary style, philosophy and techniques are showcased in SKAI’s contemporary and casually inviting setting.

SKAI is hosting a special Father’s Day Brunch on the 15th and 16th of June, with specials such as Prawn Sashimi with Shiso and Soba Noodles paired with Taittinger Brut Réserve; and Foie Gras with Ochazuke Rice, Green Tea, Plum paired with Riesling, Schloss Lieser.

The restaurant’s bright, contemporary space with panoramic views provides a vibrant backdrop for patrons to unwind, whether it’s over a casual get-together or special celebration. Diners wanting to continue on deep into the night from brunch can transit to SKAI Bar, just a few steps from the main restaurant, to enjoy a more comprehensive selection of craft cocktails – those who stay on long enough will catch the incredible sunset over the city!
