Fairmont Jakarta Presents an Exquisite Japanese Gourmet Experience by Chef Tatsuya Sakamoto at VIEW Restaurant

The third edition of “When Jakarta Meets Japan” welcomes Chef Tatsuya Sakamoto to prepare an exquisite eight-course Japanese gastronomic dinner at VIEW Restaurant

“When Jakarta Meets” series by Fairmont Jakarta is back for its third year, this time highlighting Japan as the destination theme. Dubbed “When Jakarta Meets Japan”, the exclusive event will be held from September 18 to 22, 2019. The annual event welcomes prominent guest chefs and mixologists from Japan to do a series of Japanese-themed events at Fairmont Jakarta.

One of the key highlights is the exquisite Japanese gourmet dinner experience that will be held at VIEW Restaurant on 18 to 21 September 2019, where Chef Tatsuya Sakamoto from SENSHU Restaurant will present premium ingredients in an unparalleled eight-course Japanese gastronomic menu. A Tokyo native who has been living in Indonesia for the last fifteen years, Chef Sakamoto started his chef career in the 90s at several five-star hotels in Osaka and Tokyo. He expanded his career to Marina del Rey and St. Thomas in United States, as well as to Sao Paulo in Brazil where he worked as the Official Residence Chef of Japanese consulate general.

‘When Jakarta Meets Japan’ will bring in guest chefs and mixologist from Japan to do a series of Japanese-themed events at Fairmont Jakarta from 18 to 22 September 2019

To begin the experience, guests could delight in the Cooked Horned Turban as the starter, and continued with the umami “Trio” of Sweet Shrimp, Sea Urchin and Caviar. The third course is a twist of the famous Chawanmushi, a steamed silky smooth savoury soft egg custard, creatively modified into his own version of Foie Gras Chawanmushi. Furthermore, the month of September is much anticipated by Japanese as they are entering the autumn season. In regard to this, Chef Sakamoto dedicates the fourth dish to celebrate the coming of autumn season by presenting an array of various assortment called Kinmedai, Autumn Vegetables, Kinome Miso and Foam Yuzu. The fifth course represents the premium ingredient Abalone from Ezo, topped with Liver Sauce and Black Truffle. Due to its deep and rich flavor, abalone is considered as the king of the shellfish by many.

Before we enter the main course, Chef Sakamoto brings a palate refresher with a special fruit-based dish brought from the Kochi Prefecture in Japan which produces high-quality fruits. One of which is the “Fruit Tomato” raised with a special harvesting technique that tastes sweet like fruit. As a palate cleanser, Chef Sakamoto presents the Fruit Tomato from Kochi, with sugar content of 8 degrees.

For the main course, Chef Sakamoto features one of the world’s finest beefs—the Kagoshima Beef. Kagoshima Prefecture is the largest producer of wagyu beef in Japan, blessed with a numerous amount of Japanese black cattle. The beef is marketed under the brand name of “Kagoshima (Black) Beef”. The principal characteristics of the meat are its tenderness and full-bodied flavor, together with well-balanced fat marbling throughout the muscle fibers. Guests can enjoy the distinctive meat that melts in the mouth, delivering an unforgettable culinary experience. In this rare occasion, Chef Sakamoto presents the premium Kagoshima Beef Sirloin in Sukiyaki flavour. As an ending to the gourmet experience, guests could enjoy the Autumn Mushrooms and Chestnut Rice, and followed by dessert.

The Japanese Ambassador to Indonesia, H.E. Ishii Masafumi, will also grace the special occasion at its opening night on 18 September 2019. Aside from the exclusive dinner, other events in the schedule ranges from afternoon tea in Peacock Lounge, party in K22 Bar, bar takeover in Barong Bar to buffet dining in Spectrum. “When Jakarta Meets Japan” is brought to you by Fairmont Jakarta, supported by Le Club AccorHotels, Lexus, Nissan, and in partnership with The Embassy of Japan, Jakarta Province Government and Jakarta Japan Club.
