Sustainably sourced from the deep, icy waters around Heard Island in the sub-Antarctic region of the Indian Ocean – more than 4,000 kilometres from the Australian mainland – the toothfish is then coated with mixed Italian spices before being pan-fried and expertly grilled to perfection.
