Stories of the Sea That Spurs Your Culinary Journey by The Second Chapter at The Manor

Successfully built the first iteration of the Stories of the Sea menu, the team of culinary artisans at The Manor, led by Chef David King, Director of Culinary, have lifted the menu further and onto upper level to showcase a new range of the finest ingredients from the sea, including, Sicilian red prawns and Bluefin tuna from Spain.

As they envision to offer diners an exquisite six-course set dinner menu featuring a selection of new dishes and a range of enhancements to the awe-inspiring menu, The St. Regis Macao, Cotai Central is coming with the most recent evolution, its Second Chapter of the Stories of The Sea menu. Having the Balfegó Bluefin Tuna from Spain with its distinctive full flavor and firm texture as signature dish of the Stories of the Sea – The Second Chapter sets a high class standard of a culinary journey. Served with kale in lightly marinated with balsamic vinegar, the tuna is then finished off with Sichuan pepper oil to draw out its inherent richness makes Balfegó Bluefin Tuna a perfect dish for those who are in searching for a surreal gastronomy.

The much adored ‘Glacier 51’ Toothfish presents in the new version- served with a delicate parmesan risoni and chamomile foam.  Also coming the Hokkaido Sea Urchin with Ocean Trout Roe, the Sicilian Red Prawn with green apple purée, sunflower honey and avocado oil, Spanish Octopus served Char Siu-style.  Indulge yourself with an element of theatre for dessert with a multi-layered Valrhona Chocolate sphere that is ignited with Japanese whiskey at the table.

Delight yourself with an enhanced paired wine and cocktail package featuring the second to none wines from America, Portugal and Italy, which have been deliberately chosen to highlight the freshness of the sea ingredients and enhance the flavour experience.
