Paul Parayre – Fairmont Jakarta’s New Executive Assistant Manager of Food and Beverage


Fairmont Jakarta recently appointed Paul Parayre as its new Executive Assistant Manager of Food and Beverage.

Paul Parayre is recently appointed as Fairmont Jakarta’s new Executive Assistant Manager of Food and Beverage. Holding a Master Degree in International Hotel & Tourism Management from Vatel Institute, France, Parayre started his career in hospitality industry as a manager at L’Epicurien in Aix, a Michelin Guide 2 Forks rated restaurant in France.

Parayre later joined Accor Hotel Group in South East Asia where he was appointed as Food & Beverage Coordinator, and was part of the soft opening team at the Grand Mercure Phuket, Thailand. With his continuous learning about the industry and the skills it needed, Parayre was then promoted to Assistant Food & Beverage Manager at the same hotel.

Parayre moved to Hotel Muse in Bangkok to hold the position of the Food & Beverage Manager in 2016. He oversees the operation of five dining outlets including one multi-award winner Italian restaurant, a steakhouse and a rooftop bar. And after two years of refining his passion and skills in the hotel, Parayre decided to join the Fairmont Jakarta team.

“I am excited to work in Jakarta, a city known for its vibrant dining scene. I’ve been working with many great talents and exposed to different kinds of cultures. I hope my experience will help solidify the dining offerings and continue to elevate the 10culinary experience for all our guests,” said Parayre.

Leading the food and beverage division of the hotel, Parayre will craft interesting dining concept as well as delivering the highest standard of service quality to ensure excellent dining experience for all guests. He will oversee all daily operations and management work of the Fairmont Jakarta’s seven distinct restaurants and bars as well as its in-room dining and banquet operation including the award-winning VIEW restaurant, Indonesian fine-dining 1945 Restaurant, all-day-dining restaurant – Spectrum, famous afternoon tea lounge – Peacock Lounge, Italian restaurant – Sapori Deli, Barong Bar and K22 Bar.
