A Capella Singapore Epicurean Journey at The Knolls
Capella Singapore hosts exclusive dinner that takes you on a gastronomic journey through Australia
Capella Singapore has recently shared an exciting culinary event taking place later this month at Capella Singapore’s The Knolls on Friday, 23 August 2019, 7pm. The exclusive one-off wine dinner is jointly curated by Chef David, culinary director of Capella Singapore, and Brendan Carr, winemaker of acclaimed winery, Xanadu Wines.
The exquisite four-course degustation menu will take guests on a gastronomic journey through Australia, featuring fresh and finest produce from various regions, and expertly paired with the distinct characters of the Margaret River’s wines.
Hailing from the South-West of WA, Brendan has always held Margaret River close to his heart. Coming from the country, and having a passion of surfing, for Brendan living and working in the Margaret River region was a natural decision. Yet, he soon realised that his amateur surfing skills of the famous barrels of Margaret River wouldn’t suffice as a career path alone, so he decided to turn his attention to barrels of wine instead.
Chef David started his illustrious career in 1988 and has had the opportunity to work and learn from some of the best hotels and restaurants in France, including Michelin-starred restaurants like the Chateaux Eza in Eze Village, L’Oasis in La Napoule, as well as the Chantecler in Hotel Negresco Nice.
A highlight of the menu includes the melt-in-the-mouth Smoked Petuna Ocean Trout dish with pink grapefruit, radish, trout roe, pine nuts and parmesan emulsion, which is complemented with a refreshing Exmoor Sauvignon Blanc Semillon 2018. Another epicurean delight is the Wagyu Beef Cheek with charred leek, red plum, popcorn shoot salad, sliced truffle, which is expertly paired with a bright Estate Carbernet Sauvinon 2014.
